Brinjal sabji
Ingredients:
- Brinjal - 200gms -(4-5). chop it into small pieces like cubes.
- tomato - 3 medium sized
- Onion - 1 medium sized
- chillie powder - 3 spoon
- turmeric powder - 1/4 teaspoon
- garlic 4 - 5 cloves
- Coconut mix - Grind 1/4 of a medium sized coconut with water.
- oil- 4 table spoons
- vadagam / mustard seeds for seasoning
- Curry leaves little
- coriander leaves
Method
- Heat oil in the pan and add vadagam /mustard seeds, Curry leaves, Onion and garlic.Saute it.
- Then add Tomato and brinjal.fry it for few min.
- Then add Chillie powder,turmeric powder and water. close the pan pan and allow the contents to cook.
- Add salt and the coconut mix.Cook it for 5 more minutes.
- Garnish with coriander leaves
