Brinjal sabji

Ingredients:
  1. Brinjal - 200gms -(4-5). chop it into small pieces like cubes.
  2. tomato - 3 medium sized
  3. Onion - 1 medium sized
  4. chillie powder - 3 spoon
  5. turmeric powder - 1/4 teaspoon
  6. garlic 4 - 5 cloves
  7. Coconut mix - Grind 1/4 of a medium sized coconut with water.
  8. oil- 4 table spoons
  9. vadagam / mustard seeds for seasoning
  10. Curry leaves little
  11. coriander leaves
Method
  • Heat oil in the pan and add vadagam /mustard seeds, Curry leaves, Onion and garlic.Saute it.
  • Then add Tomato and brinjal.fry it for few min.
  • Then add Chillie powder,turmeric powder and water. close the pan pan and allow the contents to cook.
  • Add salt and the coconut mix.Cook it for 5 more minutes.
  • Garnish with coriander leaves

Kathrikai murungakai Poricha Kuzhambu - Brinjal drumstick curry

Ingredients:
  1. Drumstick -1
  2. Brinjal - 3-4
  3. Onion - 1 medium size
  4. garlic - 5 cloves
  5. tomato - 3
  6. tamarind - small lemon sized /tamarind paste -3/4 spoon
  7. chillie powder -2 1/2 spoons
  8. turmeric powder - 1/4 teaspoon
  9. oil - 5 table spoons
  10. curry leaves - little
  11. cumin seeds - 1/4 teaspoon
Method:
  • Heat oil in the pan and add mustard seeds,curry leaves and cumin seeds / vadagam
  • Then add Onion and garlic and saute it for few min.
  • Add Brinjal , Drumstick and fry it for 3 min.
  • Then add tomato, saute it for few min and add chillie powder,turmeric powder,water and salt Close the pan for 5- 7 min.
  • Then add the tamarind paste.Boil for few min.
  • smash garlic,little cumin seeds,curry leaves and keep it in a vessel aside.
  • Now transfer the pan contents to the vessel.

Kesari

Ingredients:

Sooji (rava) - 1 cup
Sugar - 3/4 cup
ghee/refined oil - 9 table spoons
cashew - 6-7 pieces
dried grapes - 6-7 pieces
kesari powder - 1/4 tea spoon

Preparation:

1. Heat Little ghee in the kadai (wok) and fry the cashew and dried grapes.
2. Keep the above content aside.
3. Heat ghee in the kadai (wok), add sooji and fry it.
4. While frying the sooji simultaneously boil 3 tumblers of water.
5. Then pour the water into the kadai (wok)
6. Close the Kadai with a lid and cook in low flame.
7. After 3 min open the lid,add sugar and kesari powder -mix well.
8. Garnish it with cashew and dried grapes

Plum Cake

Ingredients:


1. Maida /All purpose flour - 115 gms
2. Sugar - 115 gms
3. Butter - 115 gms
4. Egg - 3
5. Cashew, cherry,Dried grapes - 25 gms
6. Raisins - 40 gms
7. Dates - 1 pkt
8. Vanilla Essence -1 spoon
9. Baking Powder - 1 spoon
10. Caramel - heat 1/2 cup sugar in a dry pan until it liquifies or u can get ready made caramel
11. Cinnamon powder - 1/4 tea spoon.

Preparation:

1. Chop the nuts (cashew and dates) to small pieces.
2. Mix sugar with butter and batter it well.
3. Beat the eggs and mix it with sugar and butter.
4. Add maida and baking powder to the sugar-butter mix.Then add cinnamon powder and
vanilla essence
5. Add Caramel and nuts.
6. Bake it in the oven.
7. Cake ready.

Paasi Parupu (moong dal) Sambar

Ingredients:


1. Paasi parupu (moong dal) - 1/2 cup
2. Onion - 1 Big size
3. Tomato - 1 Big size
4. Garlic - 3-4 cloves
5. Asafoetida - little
6. Red Chillie - 1
7. cumin seeds - 1/4 teaspoon
8. mustard seeds - 1/4 teaspoon
9. Curry leaves - little
10. oil- 2 tea spoons
11.coriander leaves little
12. salt - As required
13. turmeric powder - 1/4 teaspoon

Method:

1. Pressure cook Paasi parupu, onion, tomato, garlic,turmeric powder
2. Then add salt and mix well.
3. Heat oil in the pan, then add cumin seeds,mustard seeds,curry leaves and chillie.
4. transfer the cooker contents to the pan.Add water if required and allow it to boil for 5 min.
5. Garnish it with coriander leaves.

Vendakai Poricha Kuzhambu - Okra curry

Ingredients:
  1. vendakai/Okra - 7 to 8
  2. Onion - 1 medium size
  3. garlic - 5 cloves
  4. tomato - 3
  5. tamarind - small lemon sized /tamarind paste -3/4 spoon
  6. chillie powder -2 1/2 spoons
  7. turmeric powder - 1/4 teaspoon
  8. oil - 5 table spoons
  9. curry leaves - little
  10. cumin seeds - 1/4 teaspoon
Method:
  • Heat oil in the pan and add mustard seeds,curry leaves and cumin seeds / vadagam
  • Then add Onion and garlic and saute it for few min.
  • Add Okra/vendakai and fry it for 3 min.
  • Then add tomato, saute it for few min and add chillie powder,turmeric powder,water and salt Close the pan for 5- 7 min.
  • Then add the tamarind paste.Boil for few min.
  • smash garlic,little cumin seeds,curry leaves and keep it in a vessel aside.
  • Now transfer the pan contents to the vessel.

Thakkali Kuzhambu

Ingredients:
  1. Onion - 1 Medium size
  2. Tomato - 5 -6 medium size
  3. oil- 6 table spoons
  4. garlic - 4-5 big cloves
  5. chillie powder - 3 spoons
  6. turmeric powder - 1/4 tea spoon
  7. clove -2 to 3
  8. Cinnamon stick - 1"
  9. Coconut mix - grind 1/4 of medium sized coconut with water .
  10. Curry Leaves - little
  11. Coriander leaves for garnishing.
  12. Salt - 3/4 spoon or as required.
Method:
  • Heat oil in the Pan, add clove, Cinnamon stick, Curry leaves, garlic and Onion.Saute it for few minutes.
  • Then add tomato.Fry until the tomato liquefies.Then add water,chillie powder,turmeric powder and salt.Close the pan and boil the contents for few minutes.
  • Then add the coconut mix and boil.
  • Garnish with coriander leaves.
